Balsamic Vinegar IGP/PGI (Protected Geographical Indication) is obtained from partially fermented grape-must, cooked or concentrated; The must is added to wine vinegar (absent in the traditional version), in the minimum measure of 10%, and a rate of vinegar at least 10 years old.
